Gakundu factory was founded in 1964, and is operated by the Gakundu Farmers Cooperative Society (FCS), which has more than 1200 active smallholder farmer members. The members deliver their coffee cherry the same day it’s harvested, and hand sort at the factory to remove any cherry that is not perfectly ripe. The cherry depulped, fermented overnight for 15-23 hours, then washed three times using fresh water from a nearby river. It is held in soaking tanks until there is space on the drying tables. Drying on the tables can take between 7-15 days, and the coffee is turned and rotated constantly to achieve even drying.
Washed Process, or “wet” process, is used all over the world in many different variations. Typically, the skin of the coffee cherry is removed and the beans are left with some fruit mucilage stuck to them. The beans go through a mild fermentation to break down the sugars and loosen the fruit from the beans, and are then rinsed and dried. Washed process coffees tend to have clean, clear flavors and a brighter acidity.
