Chania Estate is headed up by Boyce Harries whose family has owned and operated this farm for generations. This is somewhat unique as most of the coffee in Kenya is processed at washing stations or cooperatives and have hundreds of members. Chania Estate being a single farm has an advantage of having more control and oversight as well as the ability to experiment with both processing and varieties.

Washed Process, or “wet” process, is used all over the world in many different variations. Typically, the skin of the coffee cherry is removed and the beans are left with some fruit mucilage stuck to them. The beans go through a mild fermentation to break down the sugars and loosen the fruit from the beans, and are then rinsed and dried. Washed process coffees tend to have clean, clear flavors and a brighter acidity.
