David Alexander Ceron owns and operates a small farm in Narino, Colombia called El Progreso. He grows Castillo variety which is disease resistant and robust but not known as the highest quality, yet Ceron manages to pull out incredible complexity and refined acidity in this traditionally washed process coffee. After the coffee is picked at peak ripeness, it is fermented for about 24 hours, then washed and dried in a greenhouse with a double roof for 11 days.
