Vista Barú Geisha - Panama


Origin: Boquete, Panama

Process: Anaerobic Fermentation Natural

Tasting Notes: Strawberry, Green Mango, Apricot, Floral

This Geisha variety is grown at Vista Barú Estate under the supervision of Juan Elías Palma in the mountainous region of Boquete in western Panama. This lot starts with coffee cherries fermented anaerobically in sealed containers with a one-way valve to release carbon dioxide. Brix, pH, and temperature readings are used to ensure fermentation is controlled. After fermentation is complete, the coffee cherries are moved to a drying patio with mesh screens above the coffee to diffuse the sunlight enough to achieve slow, consistent drying over the course of 15 days.
