Story
Flying Pumas is a unique coffee farm in the Chiriquí Mountains focused on high quality coffee production as well as wildlife conservation efforts and regenerative agriculture practices. Part of their farm is dedicated to growing the Geisha variety which is a very high quality coffee plant variety that originated in Ethiopia and introduced in Panama in the 1960s.

This microlot came from four thousand Geisha coffee plants planted in 2021 and harvested on January 8th, 2025. Fermented Anaerobically in special bags at temperatures between 57 and 82°F for 42 hours. After depulping, it was fermented in mucilage for 61 hours and then meticulously dried on a low-elevation patio for 442 hours (18 days) to a moisture content of 10.6%. The coffee was then stabilized in special storage for 2 months.
